Authentic Chinese Fried rice Recipes
I always feel a little short-changed when I eat fried rice at a restaurant. Most of the time, it is 90-95 percent rice and five to ten percent meat and vegetables. Although I like to joke that "my version" is the opposite (i.e. 95 percent meat and veggies, five percent rice), it's probably closer to 50/50.
Fried rice recipes will vary widely, depending on what country you are from. I'll share my "Hawaiian" version with you.
To my way of thinking, this is the secret to a good fried rice (I'm not sure I'd use the word "legit, " though).
It is called char siu - a Chinese style barbeque pork.
The best ones can be found at your local Chinatown or other Chinese barbeque shop (where they sell roast pork, roast duck, soy sauce chicken, etc.). You could try making it at home, but I've never been successful in duplicating the flavor you can get when you just buy it from a shop that who makes and sells a ton of this meat everyday.
Chop the meat up into 1/4" inch portions. I like to make it so small that there are a lot of pieces, insuring me a piece of meat with 'every' bite of rice I take. The burnt parts of the meat are soooo awesome, so if you can pick a piece that has a lot of charring, that's the best one. The high fat content of this particular cut of pork also adds a ton of flavor to the fried rice dish.
In Hawaii, it is not uncommon to also add Spam or Portuguese sausage, either as a replacement for char siu or an "in addition to" ingredient.
As others have mentioned, eggs and sauteed onions are a must. The more the merrier. Don't be stingy.
You can also add frozen peas and carrots, along with chopped green onions, to add flavor and color.
Seasoning-wise, I add:
- 2 to 3 tsp soy sauce
- 1-1/2 tsp sesame oil
- 1/2 to 1 tsp salt and pepper, to taste
Cooking technique wise, I agree with the methods in the other answers - cold rice, hot oil and pan.
On occasion, I have added a couple of teaspoons of . It is made from dried seafood including scallops, dried fish and shrimp and is cooked with chili peppers, onions, garlic and oil. Although it is very expensive, it adds a wonderful flavor if you want fried rice with a twist. It can be found in most Chinese supermarkets (or online).
