Mala Chicken usually refers to Sichuan chicken or Szechuan chicken is a short name of the dish Sichuan chicken with chili peppers (creating the spicy taste)and Sichuan peppercorns(creating the numb feeling ). Prepare a kitchen scissor, find the loose side of the chicken thigh, and cut it apart. Then cut all the other connections on the bottom of the chicken thigh. Hold the thigh with one hand and then push all the meat down. And then use scissor to cut the left meat on the bone.
Some tips for controlling the spicy taste:
If you cannot eat too spicy food, then do not cut all the chili peppers into sections. I only cut 1/3 of my chili peppers for the consideration of children. Besides, pre-soak the chili peppers and drain to keep the spicy taste. But you might be much more comfortable during the stir fry process if you are still new to stir fry hot dishes.
Marinade the chicken cubes for 10 minutes and deep-fry for twice until golden brown or dark brown. Filter the extra oil.
