Chinese Beef Minced recipe
Well, you know, what I really want to have, some recipes can keep me really cheerful, despite the terrible weather, despite the unluckiness in fate, despite what other people say, despite how many times I fail myself … Or some recipes just keep me being myself, never over-joyed because of achievement, never need to demand much, never have daydream that can never be fulfilled… :) :)
I was talking to a friend a couple of days ago about Chinese healthy recipes. Some recipes are crazily expensive, or complicated to make. But there are other recipes, like today’s, stir frying beef mince and celery, more like an everyday’s dish, simple but healthy … oh, and this one is especially healthy for pregnant ladies. :)
Stir-frying mince sounds really strange. Also, in this recipe, mince really acts as one of the main ingredients and not just as an “assistant” ingredient like in other Chinese recipes with tofu or aubergine.
It is said that this combination is rich in calcium, can help ‘smoothing the qi’ in the inner body and enrich the blood, strengthen the bones. If you eat this dish regularly, you can benefit from calcium, phosphorus and iron’s intake, prevent from having cramped legs, (which is often seen in PG), and help fetus’s development.

Here you go, really simple.
Beef mince (or lean beef chopped into small pieces, around 70g), celery (half of a bunch)
Light soy sauce, corn flour, cooking wine, spring onion, ginger, oil, salt
1) Chop the celery into around 3cm long strips.
2) Mix the beef mince (or small pieces) with 1 tablespoon of light soy sauce, 1 teaspoon of cooking wine, 1 tablespoon of corn flour. All it sit for around 20 mins.
3) Chop half of spring onion, a small piece of ginger into small pieces (minced).
1) In a heated wok, (keep the fire strong during the stir frying), pour in around 3 tablespoons of oil.
2) When the oil is getting hot, add in chopped ginger and spring onion. Stir fry, until you can smell them.
3) Add in beef mince (or small pieces). Stir fry mince in the wok, when the colour of the beef is changing, remove it to a plate. (Don’t over cook it, otherwise it could be too dry. )
4) Leave around 1 1/2 tablespoon of oil in the wok, add in chopped celery, stir fry quickly.
5) Add in 2/3 teaspoon of salt (or a bit less to your taste).
6) Then put stir-fried beef mince back to the wok, stir fry it with celery together.
Add in 1 teaspoon of light soy sauce, and 1 teaspoon of cooking wine. Stir-fry further 1 or 2 mins. —
Easy, no? The only thing is that try to avoid to get beef mince too dry, and also try to keep the celery crispy. If you are not sure about the celery, you can lightly oil fry it first, or boil it in water, then quickly stir fry it with beef mince.
