The lunisolar Chinese calendar rolls over to the Year of the Monkey on Monday, Feb. 8, marking the beginning of the Spring Festival. Festivities kick off the day before the New Year and continue through the Lantern Festival, the 15th day of the new year. 1 Beijing Noodle No. 9
Noodles are made in house in front of guests near the dramatic fish tanks that flank the space. Look for street fare from Shanghai, Hong Kong and Beijing on the menu with specialties such as handmade noodle with sliced pork and mushroom, Imperial seafood soup dumplings, pan-fried shrimp in Chinese wine sauce and live seafood.

Look for this cheap Chinese haven in the same strip mall as Monta, Raku and Kabuto. Here you can find Chinese noodles and tender poached chicken and beef. Best of all, everything on the menu is in the $5 range.

4 Chengdu Taste
Look for Chengdu's homegrown specialties of bang bang chicken, couple's sliced beef, green chili chicken, diced rabbit with younger sister's secret sauce, and the "sorrowful" mung bean noodles. As always, skip the proverbial "water boiled" proteins and go straight for the various "mao cai", a symbolic spicy Chengdu casserole, typically shared family style, that is a dish of pride to many Chengdu city locals.

Enter this Beijing restaurant now open at Caesars Palace through a modern and classic entrance in chic black and white. Find a champagne arrival at the elevators, a first at one of the seven Mr Chow locations worldwide, that take guests up to the second floor with a view overlooking the Garden of the Gods. Guests first note the suspended centerpiece kinetic sculpture that moves and changes colors, another first for Mr Chow. The dining room with space for 250 features a terrace overlooking the pools and four private dining rooms that can seat 50 each. Dine on Beijing duck, chicken satay, green prawns and hand-pulled Mr Chow noodles, all served family style.
